I know this probably has been addressed before, but how do you play a saved game from version 8.0.6 in the new 11 version?

Alpha 8 is not compatible with Alpha 11 because there has been a lot of development in between and Founders’ Fortune is still in Early Access.
However, if you want to play an earlier version, you can do it like this:

"You can only play a save on the version the save come from."
exemple: Alpha 8 saves are NOT compatible with other versions.
