I cannot for the life of me figure out how to get a village to smelt copper in the furance. There is no “smelter” plot.
I know I am probably just being stupid - but does anyone know how to do it?

nah, I’ve seen multiple people be confused here.
What you can do is use the slide. The slide can move the ore from the stockpile directly into the furnace, no villager required.

Sidenote :
It is possible to make infinite stackable design by having on of the materials on a upper floor
Example here has Wood logs and copper ore feeding in on ground floor and Copper ingots going out 3 tiles above. The packling stations are not on the same side as they are impossible to select if the are above each other.
Note that with how slides work the last in line furnace will fill up 1st
