Is there a key that can be pressed once instead of holding down to craft? Looking for some QoL here as holding down the left mouse button for long periods of time can be taxing for those with carpal tunnel.
Not yet, but I fully agree it makes sense. It’s one the list 
Also, we’re planning to rebalance the crafting times so the only things that take long to craft are the ones you can easily delegate to the villagers.

I just finished the feature, so I can confirm that in Alpha 4 you can press space to auto-craft (can change it in keybindings, too).

As someone with arthritis this is a great relief and simplifies the process
With the production window open, press and release the ‘space’ key for continuous production, and then press the space key again to stop production.
I did actually find this option accidently, but the keyboard setting can be changed in ‘Settings > Keybindings’.
